Family Story Patty says this was the first recipe she learned when she married into the Gatorama family. Cecil believed if you were going to serve gator, you’d better start simple and do it right. Fried gator bites became the meal of choice after long days in the pens — crispy, hot, and eaten straight off a paper towel.
Ingredients (Serves 4)
1 lb Gatorama gator tail, cut into bite-sized pieces
1 cup buttermilk
1 cup flour
1 tsp Everglades Seasoning
Oil for frying
Directions
Place gator tail pieces in buttermilk and soak for 30 minutes.
In a bowl, mix flour and Everglades Seasoning.
Heat oil in a deep skillet to 350°F.
Remove gator from buttermilk and dredge in seasoned flour.
Fry in batches 3–4 minutes until golden.
Drain on paper towels and serve hot.

Gator tail is lean — don’t overcook. When it floats and turns golden, it’s ready.
